3 Gluten free Pancakes

Pancakes were always a staple in my house growing - my dad loved cooking them for us for breakfast and he definitely made the best pancakes I've ever had! He'd always made the batter at night, and so going to bed I'd know we'd be having pancakes for breakfast!! He had one of those awful recipes that he couldn't share - a dash of this, a splash of that, a few eggs... What does that even mean?!?! He did it all by consistency and they truly were the best to be had!

Best Homemade Guacamole

When it comes to my favourite type of cuisine I'm as fickle as the Irish weather. I could be with you at lunch and saying "Hands down, burgers are the greatest food! Well done America!" however by the time dinner rolls around I'll be lamenting "why isn't Lebanese food the one food of the world?" and those poor people who have never tried it "how are they surviving life?"

Brewji has taken to just smiling at me, shaking his head and saying "I know it's your favourite, dear."

I was lucky enough to get it as part of my Christmas present last year and since then it hasn't been far away from me. I pretty much pick it up every single day to have a read.

Easy Peanut Butter Cookies Recipe


These are honestly the easiest cookies to make, from start to finish it was about 30 minutes, you only need 4 ingredients and they are so delicious! I was seriously craving something sweet but salty earlier on and these definitely hit that spot.

They're crunchy on the outside and chewy on the inside, and they go great with a cup of tea.
