These are honestly the easiest cookies to make, from start to finish it was about 30 minutes, you only need 4 ingredients and they are so delicious! I was seriously craving something sweet but salty earlier on and these definitely hit that spot.
They're crunchy on the outside and chewy on the inside, and they go great with a cup of tea.

Ingredients:
- 1 cup of peanut butter (crunchy or smooth)
- 0.5 cup of dairy-free butter
- 0.5 cup coconut sugar
- 0.5 cup coconut flour

- Cream the peanut butter, dairy-free butter, and sugar in a bowl. It's a good idea to warm these together slightly as it makes mixing easier - though if you have an electric whisk you don't need to worry about that haha.
- Add coconut flour and combine.
- Set oven to 160℃ / Gas mark 3 / 325℉
- Grease or line a baking tray.
- Space walnut sized portions evenly on tray.
- Use a fork to push down slightly.
- Bake for 13 - 15 minutes, until golden and your kitchen smells yummy!

I only had smooth peanut butter in the cupboard, but crunchy will definitely give it a better texture. I chopped up some mixed nuts and added those to give the cookies a bit of crunch.
The longer you leave them in the oven the crisper the cookie will be - I love my cookies to be chewy so I took them out at about the 13 minute mark!
