These cookies are gluten-free, dairy-free, and vegan! They are so simple to make, and smell AMAZING when they are in the oven. In total, from prep to cooling, they took about 30 minutes.
They go down an absolute treat with a cup of coffee or tea, or even a glass of coconut milk! I made a batch yesterday and there are two left... I'm trying my hardest to save them for after dinner tonight...

Ingredients:
- 1 cup buckwheat flour
- ½ dairy-free butter
- ½ coconut sugar
- 1.5 tbsp instant espresso
- 2 tbsp dairy-free yogurt
- ½ tsp baking powder
- 50g dark chocolate

Directions:
- mix butter and Sugar until fully combined
- add instant espresso
- mix in dairy-free yogurt
- add in dry ingredients
- mix into paste
- chop chocolate and add to batter
- line two baking trays
- evenly space walnut sized portions onto trays
- bake at 180℃ / gas mark 4 for 10 - 12 minutes

* for the dairy-free yogurt you can substitute an egg, or a ¼ of a banana.
The recipe makes 14 cookies which can kept for a few days in an airtight container.

These cookies are definitely what I'd call "Grown-up Cookies" because of the espresso and dark chocolate. They also aren't overly sweet - if you prefer a sweeter cookie you can always sub in milk chocolate instead of the dark. I definitely recommend using a good quality instant coffee - something with a nice, rich, robust taste.
