Homemade Granola


Granola is something I love to have in the cupboard, it's the perfect thing to snack on when you want something sweet or to add to stuff to give it a little bit of crunch. And it's so easy to get a hold of, I mean every cereal brand and supermarket brand has their own version. But, seriously, what is with the prices?! I mean, really, it's just some sweetened toasted oats with a few bits thrown in...

It's so simple to make, and you can really throw anything you like into it. Below is my favourite granola, I like it sweet but not too sweet and with lots of nuts. I'm not big on dried fruit but if that's what you like toss some in!

This is my gluten-free, dairy-free and refined sugar-free recipe.


Ingredients: 

  • 2 cups of gluten-free oats
  • 1 cup of unsalted mixed nuts
  •  4 tbsp coconut oil
  • 3 tbsp coconut sugar
  • 1 tbsp ground cinnamon
  • 1 tsp ground nutmeg
  •  ½ tsp grated / purée ginger

Wet Ingredients

Directions:
  • Roughly chop mixed nuts, either by hand with a knife, in a blender or a food processor. 
  • Mix gluten-free oats and nuts together
  • In a saucepan on a medium heat mix coconut oil, coconut sugar, cinnamon, nutmeg and ginger
  • Add the wet mixture to the dry mixture and combine. 
  • Be careful the wet mixture will be very hot, and will have taken on a caramel like texture. 
  • Mix with spoon, it will be difficult, but once cooled down a little use your hands. 
  • Once all combined, put on baking tray. 
  • Put in oven at 180℃ for 15 to 20 minutes or until golden brown. Mixing occasionally so as not to burn.

 Warning: you're kitchen will smell amazing when this is in the oven. It's so aromatic with all the spices! 

I love eating it on it's own, with some almond or coconut milk, on top of some yogurt in the morning, or on top of some stewed apples as a makeshift crumble.

I like to store mine in a pretty glass jar, and as long as it's sealed it will be good for several weeks - mine never lasts that long though!

* Rough guideline: You can use as much spice, sugar, nuts or oil as you personally like! x
* You can substitute maple syrup, honey, or any dark sugar if you don't have coconut sugar. I just really like the rich flavour from coconut sugar! x
*I make this with gluten-free oats but any old oats will do! x
